Blogbat's Random Act of Recipe-ing
In an effort to further expand proof of my insanity, I now offer an occasional random Recipe. Don't worry, all will return to normal tomorrow. Happy Labor Day, fellow Americans.
Rich Raisin Cakes
1 lb. raisins
water
1 c. sugar
vinegar
cornstarch
3/4 c. shortening
1 3/4 c. oatmeal
1 tsp. baking soda
pinch salt
1 c. packed light brown sugar
1 3/4 c. flour
Preheat oven to 375. Grease one 8 or 9" cake pan.
Cook the raisins until soft in enough water to cover.
Add the sugar or enough to sweeten.
Add a little vinegar to taste.
Mix cornstarch with a little water to make a paste.
Thicken the raisin mixture with this and set aside.
Mix the shortening, oatmeal, baking soda, salt, brown sugar and flour into a crumbly mixture.
Reserve 3/4 c. of the crumbs and put the rest into the bottom of the pan.
Pour the raisin mixture on top.
Sprinkle with the rest of the crumbs.
Bake for 20 - 25 minutes or until a tester comes out clean.
Serve with ice cream or whipped cream.
Makes one 8 or 9" cake pan.
